Mint Chocolate Icebox Cake

In this recipe, minty whipped cream is spooned over layers of Oreo cookies; chill before devouring.

Ingredients
  • 1 cup heavy whipping cream
  • 1/2 teaspoon mint extract
  • 1-2 drops green food coloring (optional)
  • 2 tablespoon sugar
  • 1 package chocolate wafers
  • bar of chocolate (for shaving)
  • spring of mint, for garnish
Directions
  1. Place cream, sugar, flavoring, and food coloring (if using) in the bowl of an electric mixture and beat on high until stiff peaks form.
  2. To assemble:
  3. Place a single layer of wafer cookies at the bottom of a parchment lined pan; if necessary, break cookies to fill the gaps.
  4. Next, spread an even layer of the whipped cream over the cookies, then top with more cookies. Repeat as necessary for desired number of layers.
  5. Cover the top with plastic and chill, overnight, in the fridge.
  6. When ready, remove the cake from the fridge and with a peeler or microplane shave chocolate onto the cake. Garnish with mint and serve.
