Ingredients

  • 6 chicken breast halves, skinned and boned
  • 2 Tablespoons reduced-calorie margarine
  • 1 Teaspoon paprika
  • ⅛ Teaspoon pepper
  • 1 6-ounce can frozen orange juice concentrate, thawed and undiluted
  • 1 Teaspoon dried rosemary needles
  • ½ Teaspoon dried thyme leaves
  • Cooked rice and/or fresh steamed vegetables, for serving

Directions

Preheat the broiler.

Place the chicken on a rack of a broiler pan. Dot with margarine. Broil until golden brown, 3 to 5 minutes.

Transfer the chicken to a 13-by-9-inch baking dish. Preheat the oven to 350 degrees F. Sprinkle the chicken with the paprika and pepper. Pour the orange juice concentrate over the chicken, then sprinkle with the rosemary and thyme. Bake the chicken uncovered for 20 to 30 minutes. Serve over rice or fresh steamed vegetables.
