Ingredients
  • 4 1-to 1 1/2 pound lobsters
  • 1/3 package tofu, such as house foods soft tofu
  • 1 lemon, juiced
  • 1 teaspoon lemon zest
  • 2 tablespoon fresh dill
  • 2 tablespoon fresh parsley
  • 2 tablespoon extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 large celery stalk, finely diced
  • 4 hot dog buns, split
Directions
  1. Crack open the lobsters and remove the meat. Chop into even, bite-sized chunks.
  2. In a food processor, combine the soft tofu, lemon juice, garlic, dill and parsley. Pulse until smooth and creamy. Add the olive oil, salt and pepper and pulse again until combined.
  3. In a large bowl, combine the lobster meat, tofu dressing and celery. Add salt and pepper to taste, if needed. Divide among the toasted hot dog buns and serve.
