The tofu dressing replaces traditional mayo in this better-for-you lobster roll recipe. Maine lobsters are ideal, but any fresh lobster will taste delicious.

Ingredients

For the Lobster Roll With Herbed Tofu Dressing

  • 4 1-to 1 1/2 Pounds lobsters
  • 1/3 Package tofu, such as House Foods soft tofu
  • 1 Lemon, juiced
  • 1 Teaspoon lemon zest
  • 2 Tablespoons fresh dill
  • 2 Tablespoons fresh parsley
  • 2 Tablespoons extra virgin olive oil
  • 1/4 Teaspoon salt
  • 1/4 Teaspoon ground pepper
  • 1 Large celery stalk, finely diced
  • 4 Hot dog buns, split

Directions

For the Lobster Roll With Herbed Tofu Dressing

Crack open the lobsters and remove the meat. Chop into even, bite-sized chunks.

In a food processor, combine the soft tofu, lemon juice, garlic, dill and parsley. Pulse until smooth and creamy. Add the olive oil, salt and pepper and pulse again until combined.

In a large bowl, combine the lobster meat, tofu dressing and celery. Add salt and pepper to taste, if needed. Divide among the toasted hot dog buns and serve.
