- 1 Cup sugar
- 1 Cup water
- Juice and zest from one lemon
Heat all ingredients in a medium, heavy-bottomed saucepan over medium to medium-high heat for about 10 minutes. Allow to simmer. Filter out the lemon pulp and zest through a very fine sieve, then cool and star in a glass mason jar in the fridge. This should last for up to a month.
