  • 1/4 Cup all-purpose flour
  • 2 Teaspoons sugar
  • 1/4 Teaspoon baking powder
  • 1/4 Teaspoon lemon zest
  • 1 Teaspoon lemon juice
  • 1/2 Tablespoon vegetable oil
  • 1/4 Teaspoon vanilla extract
  • 1/4 Cup milk
  • Whipped cream if desired


In a large mug, combine all the cake ingredients and mix with a small whisk until smooth.

Cook in the microwave for about 2 minutes.

Serve while warm and top with whipped cream and lemon zest.
