Chop the bacon into small pieces and pan-fry in a skillet over medium-high heat until brown, about 5 minutes. Remove and drain on a paper towel. Add the sage to the bacon grease and cook for 2-3 minutes, until it begins to crisp. Remove from the pan. Combine all of the ingredients in a bowl and mix thoroughly with a fork to combine.

Arrange the mushrooms in a roasting pan. Drizzle the mushrooms with the olive oil and rub thoroughly to coat.
