What’s on the table tonight? Perfect fried chicken wings from Chrissy Teigen’s famous husband. Straight out of her best-selling cookbook, Cravings, these crispy, finger-licking wings boast stand-out flavor thanks to using seasoned salt in both the brine and the breading.
- 10 Cups cold water
- 8 Tablespoons seasoned salt, preferably Lawry’s
- 2 1/2 Tablespoons garlic powder with parsley, preferably Lawry’s
- 3 Tablespoons red pepper, ground
- 5 Pounds chicken wings
- 4 Cups flour
- Canola oil, for frying
- 1 stick unsalted butter, melted
- 4 Tablespoons hot sauce
- 2 Tablespoons honey
- 3/4 Teaspoons kosher salt
Mix together water, 6 tablespoons of the seasoned salt, garlic powder, 2 tablespoons of red pepper in a large container. Add the chicken and cover the container. Refrigerate for at least 4 hours. Mix flour, remaining seasoned salt, and 1 tablespoon red pepper in a large bowl until well blended. Remove the wings from the brine. Coat the wings, a few pieces at a time, in the seasoned flour. Pour oil into a large deep skillet or Dutch oven, filling it no more than 1/3 full. Heat the oil to 360 degrees F over medium heat. Add the wings to the hot oil in batches. Fry each batch for 10-12 minutes, turning halfway through, until golden brown and crispy. Drain on paper towels. Mix the butter, hot sauce, and honey in a large bowl until well blended. Season with salt to taste. Add wings to the sauce and toss to coat.
