Jessica's Recipe For Edible UV-Reactive Glowing Tonic Gel

This recipe from Jessica Leigh Clark-Bojin of Piescrapers is a great way to up the ante when it comes to you pies. Add it to your finished pies for a crazy glow-in-the-dark effect!

Ingredients
  • 1 cup plain tonic water
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 tablespoon agar-agar
  • 1/2 teaspoon lemon juice (or other extract flavoring)
Directions
  1. Combine all ingredients in saucepan and stir constantly until boiling.
  2. Remove from the heat, transfer to heat-safe bowl, and chill 30 minutes.
  3. Stir until sufficiently soft to permit you to suck up with a syringe or pipette.
  4. Pipe onto desired cool surface. Mixture will re-congeal in about 30 minutes.
  5. Ideal pairing: cherry or citrus flavored pies.
