Jessica’s Recipe for Edible UV-Reactive Glowing Tonic Gel

Turn your pies up a notch and make them glow

This recipe from Jessica Leigh Clark-Bojin of Piescrapers is a great way to up the ante when it comes to you pies. Add it to your finished pies for a crazy glow-in-the-dark effect!



  • 1 Cup plain tonic water
  • 1/2 Cup sugar
  • 1/4 Teaspoon salt
  • 1/2 Tablespoon agar-agar
  • 1/2 Teaspoon lemon juice (or other extract flavoring)


Combine all ingredients in saucepan and stir constantly until boiling.

Remove from the heat, transfer to heat-safe bowl, and chill 30 minutes.

Stir until sufficiently soft to permit you to suck up with a syringe or pipette.

Pipe onto desired cool surface. Mixture will re-congeal in about 30 minutes.

Ideal pairing: cherry or citrus flavored pies.
