Jack-O-Lantern Punch

Celebrate Halloween with this rum-based, lightly spiced, fruity cocktail

This cocktail is made with clove syrup and just a hint of pumpkin pie spice to add those wonderful fall flavors to your Halloween cocktail.

For the clove syrup:

  • 3 Ounces demerara sugar
  • 3 Ounces water
  • 1 Tablespoon cloves

For the Jack-O-Lantern Punch:

  • 2 Ounces dark rum, preferably Appleton Estate Reserve Blend
  • 1 Ounce clove syrup
  • 1 Ounce fresh lemon juice
  • 1 Ounce apple cider
  • 1 piece lemon peel
  • 1 Pinch of pumpkin pie spice
  • Club soda
  • Cinnamon stick, to garnish


For the clove syrup:

Place sugar, water, and cloves in a pan set over medium heat. Heat and stir until the sugar has dissolved. Simmer for several minutes. Strain out the cloves and set aside to cool.

For the Jack-O-Lantern Punch:

Combine together all the ingredients apart from the club soda with ice. Stir until chilled. Strain into punch glass. Top with club soda and garnish with a cinnamon stick.
