Ingredients
  • 16 ounce elbow macaroni
  • 1 tablespoon olive oil
  • 8 ounce ricotta cheese
  • 1 1/2 cup bowl garden vegetables, diced and boiled
  • 1 sprig parsley or basil, finely chopped
  • freshly ground pepper
Directions
  1. Select “Manual” function on the Instant Pot pressure cooker.
  2. Set the timer to 6 minutes with high-pressure settings.
  3. Add oil, pasta, salt and enough water to cover the pasta.
  4. Seal the lid and cook for 6 minutes.
  5. Release the steam through quick pressure release.
  6. Remove the lid and stir in ricotta cheese, boiled vegetables and parsley.
  7. Serve warm.
