Indian Stir Fry Chicken (Kadai Chicken)


Kadai Chicken is an Indian stir fry dish traditionally made with lots of ghee, cream and spices. This modified version is lighter and easier to prepare, without compromising flavor.

  • 1 pack Foster Farms Simply Raised Chicken Breast Tenders
  • 1 Large Capsicum - diced
  • 2 Large Onions - diced
  • 1/2 Cup Plain Yogurt
  • 1 Tablespoon Cream
  • 1 Teaspoon Ginger Paste
  • 1 Teaspoon Garlic Paste
  • 1 Tablespoon Tomato Paste
  • 4 Tablespoons Olive Oil
  • 1 Teaspoon Dried Cilantro (optional for decoration)
  • 1 Teaspoon Shredded Ginger
  • 1 Green Chili - chopped
  • 1 Teaspoon Coriander Powder
  • 1 Teaspoon Cumin Powder
  • 1/2 Teaspoon Tumeric Powder
  • Red Chili (to taste)
  • Salt (to taste)


Instructions 1. Chop the chicken into bite size pieces and keep aside. 2. In a large wok, add 2 tbsp olive oil and heat. 3. Add diced onion, capsicum and stir-fry for 2 minutes. 4. Remove from pan and keep aside 5. Add 2 tbsp olive oil, chicken and stir for on medium flame for 5 minutes (or till chicken is cooked). 6. Add all the spices and stir-fry for another 2 minutes. 7. Now add the yogurt-cream mixture and mix evenly. 8. Stir-fry on medium heat for 2 more minutes. 9. Add the onions and capsicum mix and stir-fry everything together. 10. Let it cook for a minute and then turn off the heat. 11. Transfer to serving plate, sprinkle some dry cilantro, shredded ginger and green chilies. 12. Serve Hot.
