DAVIDs TEA

We normally put marshmallows on top of hot chocolate, but have you ever had a marshmallow that tastes like hot chocolate? Now you can, with this recipe from DAVIDs TEA.

Ingredients

  • 2 perfect spoonfuls of tea, such as DAVIDs TEA Hot Chocolate tea
  • 1 Cup water, divided into halves
  • 1 Teaspoon half & half, heavy cream or non-dairy alternative
  • 3 envelopes of unflavored gelatin
  • 1 1/2 Cup sugar
  • 1 Cup light corn syrup
  • Pinch of salt
  • 1 Teaspoon vanilla
  • Non-stick spray
  • Powdered sugar
  • Cocoa powder

Directions

Steep tea in a ½ cup of hot water for 5 minutes and strain into a stand mixer bowl, fitted with the whisk attachment. Add half & half or cream alternative and gelatin, and mix until dissolved.

In a medium saucepan add remaining ½ cup of water, sugar, corn syrup, and salt. Set to medium-high heat and bring to a boil, stirring constantly. Let boil for 3-4 minutes, being careful not to let it boil over.

Add heated sugar mixture in a slow stream to the stand mixer bowl, set to low speed. Add vanilla and increase speed to high, whipping for about 15-20 minutes. The mixture will thicken and cool.

Spray and 8-by-8 or other shallow baking dish with non-stick spray and coat with powdered sugar. Pour in marshmallow mixture and let sit for at least 5 hours.

Using a greased pizza roller or knife, cut into 1 by 1 squares.

Add 4 tablespoons powdered sugar and 1 teaspoon cocoa powder into a gallon sized bag. Place in marshmallows and shake to coat.

Hot Chocolate Shopping Tip

There are so many varieties of chocolate on the shelves today it can be overwhelming to pick one – as a general rule of thumb, the fewer the ingredients, the better the chocolate.

Hot Chocolate Cooking Tip

When melting chocolate, use a double boiler and stir occasionally to avoid scorching chocolate at the bottom of the bowl.
