- 4 Cups Brussels sprouts
- 6 slices of bacon, diced
- 2 Tablespoons olive oil
- 1/2 Cup red onion, chopped
- 1/4 Cup honey
- 2 Tablespoons apple cider vinegar
- 1/2 bag of fully cooked Perdue Short Cuts Original Roasted Carved Chicken Breast
- Salt, to taste
- Pepper, to taste
Preheat oven to 350 degrees F. In a baking dish, spread Brussels sprouts in a single layer and put in oven.
In a large skillet, cook bacon over medium heat until crisp. Remove bacon and drain on paper towels.
Add 2 tablespoons of olive oil to the pan and add onions in, stirring constantly, for 6 to 8 minutes or until tender. Remove from heat; add onions to the pan of Brussels sprouts. Toss well and spread in a single layer. Bake for 20 minutes.
In a small bowl, combine honey and vinegar. Remove pan from oven; stir in honey mixture, bacon, and Perdue chicken. Add salt and pepper to taste and serve.
