Honey Roasted Brussel Sprouts with Bacon and Chicken

If you want to make a quick and delicious dinner this recipe is for you. Use Perdue’s fully cooked Short Cuts Original Roasted Carved Chicken Breast to shorten your time in the kitchen. Mix it in with honey roasted Brussel sprouts and bacon for a sweet and savory dish. 

Ingredients

  • 4 Cups Brussels sprouts
  • 6 slices of bacon, diced
  • 2 Tablespoons olive oil
  • 1/2 Cup red onion, chopped
  • 1/4 Cup honey
  • 2 Tablespoons apple cider vinegar
  • 1/2 bag of fully cooked Perdue Short Cuts Original Roasted Carved Chicken Breast
  • Salt, to taste
  • Pepper, to taste

Directions

Preheat oven to 350 degrees F. In a baking dish, spread Brussels sprouts in a single layer and put in oven.

In a large skillet, cook bacon over medium heat until crisp. Remove bacon and drain on paper towels.

Add 2 tablespoons of olive oil to the pan and add onions in, stirring constantly, for 6 to 8 minutes or until tender. Remove from heat; add onions to the pan of Brussels sprouts. Toss well and spread in a single layer. Bake for 20 minutes.

In a small bowl, combine honey and vinegar. Remove pan from oven; stir in honey mixture, bacon, and Perdue chicken. Add salt and pepper to taste and serve.
