Once you’ve tried grilled watermelon, you’ll never look back.

Add the lime juice, lime zest, honey, cayenne, and salt to a small bowl. Whisk until well combined.
Preheat a grill to medium-high heat. Grease the grill with nonstick spray.
Place the watermelon slices on the grill, and cook for 2-3 minutes per side. During the last minute of cooking, brush the syrup on the slices.
Transfer the watermelon from the grill to ice cream bowls. Top them with generous scoops of vanilla ice cream. Drizzle remaining syrup over ice cream. Garnish with whipped cream and mint leaves. Serve immediately.
