This refreshing salad gives a nod to summer with grilled peaches and dandelion greens, and is the perfect dish to create when you're craving something light and grilled.

Ingredients
  • 4 ripe peaches, peeled, pitted, and sliced thin
  • 1 tablespoon mustard
  • 1/4 cup balsamic vinegar
  • 1/2 cup canola oil
  • 1 teaspoon thyme leaves
  • 1 teaspoon lemon zest
  • 1 cup arugula
  • 1 cup dandelion greens
  • feta cheese, crumbled, as needed
Directions
  1. Grill the peaches quickly, just until marked. Combine the mustard, balsamic, canola oil, thyme, and lemon zest in a blender and purée. On a plate, place the arugula in the center and top with grilled peaches. Add the dandelion greens and and toss with dressing. Garnish with feta cheese and serve.
