Grilled Peach, Feta Cheese, Arugula, and Dandelion Green Salad
This refreshing salad gives a nod to summer with grilled peaches and dandelion greens, and is the perfect dish to create when you're craving something light and grilled.
- 4 ripe peaches, peeled, pitted, and sliced thin
- 1 Tablespoon mustard
- 1/4 Cup balsamic vinegar
- 1/2 Cup canola oil
- 1 Teaspoon thyme leaves
- 1 Teaspoon lemon zest
- 1 Cup arugula
- 1 Cup dandelion greens
- Feta cheese, crumbled, as needed
Grill the peaches quickly, just until marked. Combine the mustard, balsamic, canola oil, thyme, and lemon zest in a blender and purée. On a plate, place the arugula in the center and top with grilled peaches. Add the dandelion greens and and toss with dressing. Garnish with feta cheese and serve.
