- 8 ripe apricots
- 2 Tablespoons unsalted butter
- 2 Tablespoons sugar
- 4 slices brioche, cut about 1-inch thick
- 2 Tablespoons honey, warmed
- 2 Cups vanilla ice cream
Preheat grill to medium heat. Drizzle apricot halves with melted butter and sprinkle with sugar.
Grill the brioche slices for 1 minute on each side.
Grill the apricots for 2 minutes on each side.
Transfer brioche slices to 4 individual serving plates. Top with apricot halves, drizzle with honey, and serve with a scoop of ice cream.
