- 8 eggs
- 1 Tablespoon butter
- Salt, to taste
- Pepper, to taste
- 3 Ounces Spam, cut into 1-inch chunks
- 2 Tablespoons pesto sauce
- 3 Tablespoons Parmigiano-Reggiano cheese, plus more for garnish
In a bowl, whisk together eggs until well combined.
Add the butter to a skillet over medium heat and once melted add in eggs. Season eggs with salt and pepper to taste.
Cook eggs about half way through (about 3 minutes) Stirring often with a wooden spoon. Add the Spam, pesto, and Parmigiano-Reggiano cheese, and keep stirring until the eggs are fully cooked through.
Top with more cheese if desired and serve immediately.
