Greek Salad Skewers

Ingredients
- 2 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1/2 lemon, juiced
- 1 garlic clove, minced
- 1 teaspoon fresh oregano, finely chopped
- salt and black pepper, to taste
- 24 grape tomatoes
- 6 ounce feta, cut into 1-inch cubes
- 24 black pitted whole olives
- 12 cucumber halves, sliced ½ inch thick
- 12 wood skewers
Directions
- Whisk all the ingredients for the vinaigrette together. Season with salt and pepper to taste.
- Assemble the skewers as follows: tomato, olive, feta, cucumber, olive, tomato. Transfer to a serving plate. Repeat with remaining skewers.
- Just before you serve the skewers, drizzle with the vinaigrette. Season with additional salt and pepper.
