Simple skewers made of your favorite Greek salad ingredients are a pretty appetizer
Greek Salad Skewers


Summer appetizers don’t get any easier than these salad skewers.

For the vinaigrette

  • 2 Tablespoons olive oil
  • 1 Tablespoon red wine vinegar
  • 1/2 lemon, juiced
  • 1 garlic clove, minced
  • 1 Teaspoon fresh oregano, finely chopped
  • Salt and black pepper, to taste

For the skewers

  • 24 grape tomatoes
  • 6 Ounces feta, cut into 1-inch cubes
  • 24 black pitted whole olives
  • 12 cucumber halves, sliced ½ inch thick
  • 12 wood skewers


For the vinaigrette

Whisk all the ingredients for the vinaigrette together. Season with salt and pepper to taste.

For the skewers

Assemble the skewers as follows: tomato, olive, feta, cucumber, olive, tomato. Transfer to a serving plate. Repeat with remaining skewers.

Just before you serve the skewers, drizzle with the vinaigrette. Season with additional salt and pepper.
