Go-Chu-Jang Mac and Cheese

Add some spicy flare to traditional macaroni and cheese

Recipe Courtesy of Bibigo

You may be unfamiliar of the popular Korean condiment, Gochujang, but it’s time to get acquainted. This red chili paste is savory, spicy, and flavorful; using even a little completely transforms any boring plate of food. Gochujang provides the perfect counter-balance to the richness of macaroni and cheese.

For the Go-Chu-Jang Mac and Cheese

  • 2 Cups uncooked elbow macaroni
  • 1/2 Onion, chopped
  • 1 Clove garlic, chopped
  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • 2 Cups milk
  • 1 Cup cheddar cheese
  • 1/2 Cup mozzarella cheese
  • 3 Tablespoons gochujang hot sauce, such as Bibigo's

For the Go-Chu-Jang Mac and Cheese

Cook macaroni according to box directions, then drain the water.

Chop onion and garlic into small pieces.

In a heated pan, mix butter and flour to make a ‘roux,’ and gently pour milk to make béchamel sauce

Add Go-Chu-Jang sauce and cheddar cheese, mix well. Add oil to another heated pot, and saute chopped onion and garlic. After a few minutes, add cooked macaroni and mix in the cheese sauce

Put everything into the baking dish and add mozzarella cheese on top. Bake for 20 minutes in 400 degree preheated oven
