- 3 medium potatoes, grated
- 5 tablespoons olive oil
- 1 tablespoon pine nuts
- 1 1/8 pound ground beef
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 small onion, grated
- 1 slice cornbread, crumbled
- 1 clove garlic, sliced
- 1/4 bunch fresh parsley, minced
- 1/4 bunch thyme
- 1 egg
Grate the potatoes and cook with 2 tablespoons olive oil over medium heat. Sauté the pine nuts with 1 tablespoon olive oil over medium heat.
Gently knead together the ground beef, salt, pepper, cooked potatoes, pine nuts, grated onion, minced parsley, thyme, egg, and crumbled cornbread.
Take 1 tablespoon at a time from the meatball mix and roll to shape your meatballs. Heat 2 tablespoons of olive oil and sliced garlic in a pan over medium heat, brown both sides of the meatballs, and serve.
