Sneak some nutritious beets into your favorite brownie recipe to cut back on processed sugars without giving up your favorite chocolatey treats.

Ingredients

  • 1 Cup beet purée
  • 8 Tablespoons unsalted butter, melted
  • 3/4 Cups sugar, add a quarter cup depending on how sweet your beet purée tastes
  • 1 1/2 Teaspoon vanilla extract
  • 2 eggs
  • 2 Tablespoons esspresso
  • 1/2 Cup all-purpose flour
  • 1/3 Cup good quality unsweetened cocoa powder
  • 3/4 Cups chocolate chips

Directions

Preheat the oven to 350 degrees F, and grease an 8 by 8-inch pan with butter, and set aside. While the oven is heating, combine the beet purée, butter, and sugar. Then add the vanilla extract, eggs, and espresso. Combine the flour and cocoa powder in a seperate bowl and whisk to evenly distribute the ingredients. Combine the dry and wet ingredients, folding them together with a spatula. Finally, fold in the chocolate chips, and spread the brownie batter in the pan. Bake for 25 to 30 minutes or until a toothpick inserted in the center of the pan comes out clean.

Beet Shopping Tip

Look for vegetables that are firm and bright in color – avoid those that are wilted or have wrinkled skins, which are signs of age and damage.

Beet Cooking Tip

Different vegetables have different cooking times – cook different types separately and then combine.
