With 3 grams of fiber and 6 grams of protein per serving, this take on pancakes will be your new Sunday morning ritual. The garnish of granola adds a honey nut crunch to balance out the light, yogurt pancakes.
Ingredients
For the Yogurt Pancakes with Granola
- 1 Cup all-purpose flour
- 2 Tablespoons granulated sugar
- 1 Teaspoon baking powder
- 1/4 Teaspoon baking soda
- 1/4 Teaspoon salt
- 3/4 Cups milk
- 1/2 Cup low-fat plain yogurt
- 1 egg, lightly beaten
- 3 Tablespoons vegetable oil
- 1/2 Cup granola, such as Sweet Home Farm Honey Nut Granola
Directions
For the Yogurt Pancakes with Granola
In large bowl, whisk flour, sugar, baking powder, baking soda and salt.
In separate bowl, whisk milk, yogurt, egg and 1 tbsp of the vegetable oil.
Stir into flour mixture just until combined. Fold in granola.
Lightly brush large nonstick skillet with some of the remaining oil; heat over medium heat.
Using scant ¼ cup of batter per pancake, pour four pancakes into skillet.
Cook for about 2 minutes or until bubbles appear on top and bottom is golden brown.
Flip and cook for about 1 minute or until bottom is golden brown.
Repeat with remaining batter and oil.
