We love everything pumpkin especially our Flourless Pumpkin Banana pancakes. Originally, we tried a flourless pumpkin pancake, then a flourless banana pancake, and decided to combine the ingredients for the best of both worlds. These pancakes are fluffy and really healthy because they contain good sources of protein, potassium, and vitamin A. Plus, they will make you happy in the morning because they are as good as eating pumpkin pie for breakfast!
- 2 ripe bananas
- 1/2 Cup puréed pumpkin (unsweetened and canned)
- 2 eggs
- Cinnamon, to taste
- Nutmeg, to taste
Mix all ingredients. Pour about 1/8 cup batter into a hot and oiled frying pan (nonstick is best).
Let brown before you flip. Smaller is better because it’s easier to flip.
Enjoy with a sprinkle of cinnamon sugar, maple syrup, or plain.
Notes: Wet your spatula before you flip so it won’t stick.
