Figgy (Fizzy) Pudding
Allspice liqueur and fig syrup are the key ingredients in this holiday gin cocktail

- 2 Ounces Plymouth Gin
- 1 Ounce fig syrup*
- 1/2 Ounce fresh-squeezed lemon juice
- 1/2 Ounce fresh-squeezed orange juice
- 1/4 Ounce allspice liqueur
- 1 egg white
- 1 Ounce half-and-half
- top cub soda
*For the Fig Syrup: Simmer halved fresh figs in with equal parts sugar and water until desired flavor is achieved, the stir, sieve, and pour.
Add Plymouth, fig syrup, lemon and orange juices, Allspice liqueur, egg white, and half-and-half to a shaking tin, and shake vigorously without ice. Add ice to shaking tin, and shake vigorously again. Strain into a highball glass, adding club soda slowing as your pour to create a frothy head. Garnish with a long-cut orange zest and freshly-grated nutmeg.
