Eggless Tofu Salad

A vegan alternative to a comforting lunch classic

This eggless tofu salad makes it easier to cut meat out of your diet. The recipe calls for vegan mayonnaise, tofu, a couple tablespoons of relish, and Dijon mustard to mimic the flavor and texture of a classic egg salad. You’ll be convinced you’re eating the real thing. 

Ingredients

For the Eggless Tofu Salad

  • 1 Package extra firm tofu, such as House Foods Extra Firm Tofu
  • 2 Whole celery stalks, minced
  • 1 Tablespoon Dijon mustard
  • 2 Tablespoons relish (dill)
  • 1/4 Teaspoon garlic powder
  • 1/4 Teaspoon onion powder
  • 2 Tablespoons vegan mayonnaise
  • 1 Pinch of turmeric
  • Dash of salt and black pepper
  • 1 Pinch of dill (optional for garnish)

Directions

For the Eggless Tofu Salad

Mash tofu with fork or crumble into a large mixing bowl. Combine celery, Dijon mustard, relish, garlic powder, onion powder and vegan mayonnaise with tofu.

Add remaining spices and mix well. Chill in refrigerator for 30 minutes before serving.
