Never heard of peanut soup? Virginians love this soup, which celebrates one of their biggest crops. You start with peanuts, and then soak them to create a creamy soup that can be made ahead for a simple and delicious meal.

Virginia: Peanut Soup
Ingredients
  • 2 tablespoon peanut oil
  • 1 medium onion, chopped
  • 6 cup vegetable stock
  • 2 tablespoon all-purpose flour
  • 1 1/4 cup heavy cream
  • 1 1/2 cup peanut butter
  • 1 teaspoon hot sauce
  • 1/4 cup fresh lime juice
  • chopped peanuts for garnish
Directions
  1. Bring the vegetable stock to a boil in a pot.
  2. While the stock is heating, heat the oil over medium-high heat in a heavy pan. Sauté the onion until soft, about 10 minutes. Then, add the flour at once, whisk, and cook until still pale in color, but the roux has the texture of sand. Slowly, add the stock to the roux, whisking to incorporate. Stir in the heavy cream and peanut butter. Add the hot sauce and lime juice. Ladle into bowls and garnish with the chopped peanuts.
