Ingredients
  • 1/2 pound green and/or red kale, tough stems removed and coarsely chopped (about 4 ½ cups packed)
  • 1/2 cup citrus dressing, preferably newman’s own citrus splash dressing, divided
  • 1 grapefruit
  • 1 orange
  • 1 avocado
  • 1/2 small red onion
  • 1/4 cup shredded parmesan cheese
  • 1/4 cup marcona almonds
Directions
  1. In large bowl, combine kale with 1/4 cup citrus dressing; let stand to soften kale.
  2. Meanwhile, with sharp knife, remove peel and white membrane from grapefruit and orange to expose the flesh. Cut down side of each grapefruit and orange segment to free it from membrane. Cut each grapefruit and orange segment crosswise in half.
  3. Cut avocado lengthwise in half; remove pit. Peel and thinly slice avocado. Cut each slice crosswise in half.
  4. Thinly slice red onion.
  5. Add grapefruit, orange, avocado, and red onion to bowl with kale. Lightly season with salt and pepper. Toss to combine.
  6. Evenly divide kale mixture among each of 4 serving plates. Sprinkle each plate with Parmesan cheese and almonds and drizzle with remaining 1/4 cup dressing.
