Stay cool this summer with a sweet and refreshing gazpacho recipe. Using fresh ingredients, you can create a flavorful and healthy soup.
Ingredients
- 1 large English cucumber
- 1 small green apple
- 1 Cup Evolution Fresh Sweet Greens and Ginger
- 2 Tablespoons extra-virgin olive oil, plus more serving
- 2 Tablespoons sherry vinegar
- 3 small yellow tomatoes
- 2 garlic cloves
- 1/4 Cup blanched almonds or pine nuts
- Sea salt, to taste
- Freshly groud pepper, to taste
- 1/2 Teaspoon grated fresh ginger
Directions
Blend all ingredients together. Season liberally with salt and pepper.
Serve with a drizzle of olive oil.
