Ingredients

  • 1 large English cucumber
  • 1 small green apple
  • 1 Cup Evolution Fresh Sweet Greens and Ginger
  • 2 Tablespoons extra-virgin olive oil, plus more serving
  • 2 Tablespoons sherry vinegar
  • 3 small yellow tomatoes
  • 2 garlic cloves
  • 1/4 Cup blanched almonds or pine nuts
  • Sea salt, to taste
  • Freshly groud pepper, to taste
  • 1/2 Teaspoon grated fresh ginger

Directions

Blend all ingredients together. Season liberally with salt and pepper.

Serve with a drizzle of olive oil.

Cucumber Shopping Tip

There are three different types of cucumbers: slicing, pickling, and “burpless.” If you're making sandwiches, you might want to try the “burpless” variety which are naturally seedless and are less likely to cause gas.

Cucumber Cooking Tip

Salting your cucumber slices and allowing them to drain over a colander for about an hour will get rid of any excess water and keep your sandwich from becoming soggy.
