Ingredients
  • 1 large english cucumber
  • 1 small green apple
  • 1 cup evolution fresh sweet greens and ginger
  • 2 tablespoon extra-virgin olive oil, plus more serving
  • 2 tablespoon sherry vinegar
  • 3 small yellow tomatoes
  • 2 garlic cloves
  • 1/4 cup blanched almonds or pine nuts
  • sea salt, to taste
  • freshly groud pepper, to taste
  • 1/2 teaspoon grated fresh ginger
Directions
  1. Blend all ingredients together. Season liberally with salt and pepper.
  2. Serve with a drizzle of olive oil.
