Sliders are the perfect food for watching football, and the taste of these crispy tofu Parmesan sliders won’t have you missing meat. A coating of panko bread crumbs and Parmesan cheese gives the sliders a nice crunch, while a topping of pesto mayonnaise adds brightness to the tofu.
Ingredients
For the Tofu Parmesan Sliders
- 1 Package extra firm tofu, such as House Food's Extra Firm Tofu, drained
- 1 Egg
- 2 Tablespoons Dijon mustard
- 1/2 Cup panko bread crumbs
- 2 Tablespoons Parmesan cheese
- 1/4 Cup all-purpose flour
- 1 Tablespoon dried Italian herb seasoning
- 2 Tablespoons soy oil
- 8 Slices mozzarella cheese
- 8 Slider buns or dinner rolls, split
- 16 Fresh basil leaves
- 8 Slices tomato
For the Pesto Mayonnaise
- 1/4 Cup fat-free mayonnaise
- 2 Tablespoons basil pesto
- 1/2 Teaspoon ground cumin
Directions
For the Tofu Parmesan Sliders
Quarter block of tofu into four equal pieces. Slice each quarter horizontally into two thin pieces.
In shallow bowl, beat eggs with mustard.
In another shallow dish, place bread crumbs and parmesan cheese; mix well.
In a third bowl, combine flour and herb seasoning.
Dip tofu in flour mixture, then egg mixture, then coat with bread crumb mixture.
Heat oil in a large nonstick skillet over medium heat and add tofu to skillet cooking three to four minutes per side or until golden brown.
Top with mozarella slices after turning tofu.
Spread sides of buns with pesto mayo and place tofu slices topping with basil and tomato slices.
For the Pesto Mayonnaise
Stir all ingredients for mayo in a small bowl. Refrigerate until ready to use.
