Ingredients
  • 2 tablespoon greek yogurt, such as plain 0% chobani greek yogurt
  • 2 tablespoon reduced-sodium soy sauce
  • 2 tablespoon smooth peanut butter
  • 1 tablespoon sesame oil
  • 1 tablespoon unseasoned rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon chile sauce
  • 8 ounce whole-wheat spaghetti
  • 2 scallions, trimmed and thinly sliced
  • 1/2 small red bell pepper, seeded and thinly sliced
  • toasted sesame seeds, for garnish
Directions
  1. Blend the soy sauce, peanut butter, yogurt, sesame oil, vinegar, ginger, and chile sauce in blender until smooth.
  2. Cook the noodles according to the package directions. Pour the sauce over the noodles and toss.
  3. Add 1-2 tablespoons of cold water to thin out the sauce, if necessary. To serve, sprinkle with the scallions, peppers, and sesame seeds.
