Cook your rice in Coca-Cola for a sweet side dish that combines perfectly with spicy chicken or topped with fresh coconut shavings. 

Ingredients

  • 1 Cup white or yellow rice
  • 1 Cup Coca-Cola
  • 1 Cup water
  • 1/4 Cup chicken stock
  • 2 Tablespoons butter
  • Salt and pepper, to taste
  • Scallions, chopped, for garnish (optional)

Directions

Add all of the ingredients to a medium pan. Bring to a boil over medium-high heat. Stir once, cover, and reduce to heat to low. Simmer the rice for 20 minutes. Remove from the stove, and fluff with a fork.
