A healthy alternative to store-bought potato chips, make these sweet potato chips with coconut oil and a guilt-free snack. For the spice blend, use a combination of spices like garlic powder, onion powder, and thyme, or whatever you’re in the mood for! Recipe courtesy of Vita Coco.

Ingredients
  • 2-3 tablespoon coconut oil, such as vita coco
  • 2-3 large sweet potatoes sliced 1/8- to 1/4-inch thick, with skin or without
  • 2-3 teaspoon spice blend
Directions
  1. Preheat the oven to 350 degrees F.
  2. Melt 1 tablespoon of the coconut oil. Toss the sliced sweet potatoes and in a bowl with the melted Vita oil and season with the spice blend.
  3. In an oven-safe sauté pan, heat over medium heat then add the remaining 2 tablespoons of the oil and, working in batches, cook the sweet potatoes on either side until they begin to take on some color.
  4. Transfer to the oven and bake until they are cooked throughout, 12 minutes. Remove from oven and place in a dish; serve warm.
