Notes

For the spice blend, use a combination of spices like garlic powder, onion powder, etc.

Ingredients

  • 2-3 Tablespoons coconut oil, such as Vita Coco
  • 2-3 large sweet potatoes sliced 1/8- to 1/4-inch thick, with skin or without
  • 2-3 Teaspoons spice blend

Directions

Preheat the oven to 350 degrees F.

Melt 1 tablespoon of the coconut oil. Toss the sliced sweet potatoes and in a bowl with the melted Vita oil and season with the spice blend.

In an oven-safe sauté pan, heat over medium heat then add the remaining 2 tablespoons of the oil and, working in batches, cook the sweet potatoes on either side until they begin to take on some color.

Transfer to the oven and bake until they are cooked throughout, 12 minutes. Remove from oven and place in a dish; serve warm.

Coconut Cooking Tip

Don’t throw out your overripe fruit – instead blend into a smoothie or salad dressing, add to muffin batter, bake into a cobbler, or boil down with sugar and a little lemon juice to make jam.
