Here is an easy and classic way to prepare delicious artichokes with a simple lemon butter dipping sauce.
Adapted from a recipe in volume 127, issue 4 of Good Housekeeping Magazine, published in the spring of 1948.
Remove stems, leaving only 1/2'' at the base of the artichoke. Remive smaller, tougher leaves and cut off tips.
Add artichokes bottoms up in boiling water. Cover and let simmer for 30 minutes.
Remove artochokes from water with kitchen tongs.
Serve with lemon butter.
Heat butter in small saucepan on medium heat, until melted.
Remove from heat and add lemon and minced parsley.
