- 1/2 Cup protein pancake mix, such as About Time
- 1/4 Cup plus one eigth cup water
- 1/2 Teaspoon baking powder
Preheat oven to 350 degrees F.
Combine all ingredients until smooth.
Line a 6-cup muffin tin and fill halfway with batter.
Place in oven and bake for 8 to 10 minutes, or until a toothpick comes out clean.
Enjoy warm or cold. Try topping them with peanut butter or maple syrup!
