Chocolate Chip Cookie Dough Cheesecake

Kid-friendly and sophisticated enough to serve at a dinner party, this cookie dough cheesecake is always a winner.

Ingredients

For the crust:

  • 1 1/2 Cup chocolate wafer cookies, finely crushed
  • 2 Tablespoons sugar
  • 1/4 Cup melted butter

For the cheesecake:

  • 16 Ounces cream cheese, cubed
  • 3/4 Cups plus 2 tablespoons sugar
  • 1 Cup sour cream
  • 3 eggs
  • 1 Teaspoon vanilla extract

For the cookie dough:

  • 1/4 Cup butter, softened
  • 1/4 Cup brown sugar
  • 1/4 Cup sugar
  • 2 Tablespoons water
  • 1 Teaspoon vanilla extract
  • 1 Cup semisweet chocolate chips
  • 1/2 Cup all-purpose flour

For the topping:

  • 1 Cup sour cream
  • 2 Teaspoons white sugar
  • 1 Teaspoon vanilla extract

Directions

For the crust:

Preheat the oven to 350 degrees F.

Mix the chocolate wafer cookie crumbs, sugar, and melted butter together in a bowl. Press firmly into the bottom and ½-inch up the sides of a 9-inch springform pan. Bake the crust for 8 minutes, until set.

For the cheesecake:

Beat the cream cheese and sugar together until creamy. Add sour cream, eggs, and vanilla extract. Beat until batter is smooth. Pour batter over the crust.

For the cookie dough:

Beat butter and both sugars together. Stir in water and vanilla extract. Add chocolate chips and flour, and mix until well combined. Drop cookie dough in 2 tablespoon portions over the top of the cheesecake, pushing the dough into the batter.

Bake in the preheated oven for about 40 minutes, until the cheesecake is almost set, but wobbles slightly in the middle when shaken.

For the topping:

Combine sour cream, sugar, and vanilla together until smooth. Spread over the hot cheesecake. Cool to room temperature and refrigerate for at least 4 hours, until cold, before serving.
