Chilled Cantaloupe-Ginger Soup Recipe

A dairy-free cold summer soup that can revitalize you on a hot, summer day like almost nothing else can.

  • 5 cups diced ripe cantaloupe
  • 2 cups unfiltered apple juice
  • ¼ cup lemon or lime juice
  • 1 tablespoon minced fresh ginger
  • 2 tablespoons honey
  • Fresh mint leaves, for garnish


Blend all ingredients together in a food processor or blender until smooth. Chill at least 1 hour or overnight. Garnish with fresh mint leaves.
