Chicken Salad with Citrus Vinaigrette


Fast and fabulous, this top-notch chicken salad features sweet fruit, crunchy cabbage, and toasty pecans tossed with a citrus subtle sweet vinaigrette.

For the citrus vinaigrette

  • 2 Teaspoons Dijon mustard
  • Salt and pepper, to taste
  • 2 Tablespoons lemon juice
  • 2 Tablespoons olive oil
  • 1/3 Cup orange juice
  • 1 Tablespoon honey

For the chicken salad

  • 3 Cups cooked, diced skinless chicken breasts
  • 1 Cup red grapes, cut in half
  • One 11-ounce can Mandarin oranges, drained
  • 1 bunch green onions, chopped
  • 1/3 Cup pecan halves, toasted
  • 1/2 Cup chopped celery
  • 2 Cups shredded Napa cabbage


For the citrus vinaigrette

In bowl, whisk together all of the ingredients.

For the chicken salad

In large bowl, combine all of the ingredients and toss with the citrus vinaigrette.
