Ingredients
  • 1/2 package ramen noodles, without spice packet
  • 1 clove garlic, minced
  • 1 cup shredded cooked chicken
  • 2 tablespoon soy sauce
  • 1/2 teaspoon ground ginger
  • 2 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 1 tablespoon rice vinegar
  • 1/2 cup shredded cabbage
  • 1/2 cup shredded carrot
  • 1 scallion, chopped
  • 1 tablespoon sesame seeds
  • fresh cilantro
  • salt, to taste
Directions
  1. Boil ramen noodles until cooked.
  2. In a large pan, add 1 tablespoon of sesame oil and garlic. Sauté until fragrant.
  3. Add the cooked chicken, carrots, cabbage, ginger, and cooked noodles. Stir.
  4. In a separate small bowl, combine lime juice, rice vinegar, soy sauce, salt, and the remaining sesame oil. Whisk thoroughly.
  5. Serve the noodle and chicken mixture in a bowl mixed together with the dressing. Garnish with sesame seeds, cilantro, and scallions.
