Cheesy Roasted Chickpeas (Chickpea Cheetos)
Ingredients
  • 1/4 cup plus 2 tablespoons powdered cheese, such as the cheese that comes with easy mac
  • 1 1/2 teaspoon buttermilk powder
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon cornstarch
  • 2 (15-ounce) cans of chickpeas
  • 2 tablespoon olive oil
  • 1 teaspoon kosher salt
Directions
  1. Combine all the ingredients in a spice grinder or coffee grinder. Pulse for 15 to 20 seconds or until the powders are completely combined. Set aside.
  2. Preheat your oven to 350 degrees F.
  3. Drain and rinse the chickpeas well in a colander. Then, dry them well with paper towels or in a salad spinner. Coat the chickpeas in olive oil and season with the salt. Spread the chickpeas out onto a parchment lined sheet pan in one layer. Bake the chickpeas for 30 minutes in the pre-heated oven.
  4. After the 30 minutes is up, turn off the oven, but leave the chickpeas in the oven for an additional hour to continue to dehydrate and crisp. Cool the chickpeas completely before tossing with the Cheetos seasoning. Store the chickpea Cheetos in an airtight container for up to two weeks.
