Cheesy Lasagna Cupcakes with Shrimp
Do I really have to explain this? These are individual lasagna cupcakes, for crying out loud! They taste great and they're adorable. I decided to make these as a twist on shrimp mac and cheese! Hope you enjoy!
Note: You can really make any type of cheese sauce you want for this. It's a fun lasagna and mac and cheese hybrid that makes a great party food, as well!
- 2 Tablespoons unsalted butter
- 1 Teaspoon minced garlic
- 1 Tablespoon all-purpose flour
- 1/2 Cup milk
- 2 Ounces Brie, cut into small pieces, rind removed
- 1 Teaspoon honey
- Salt and pepper, to taste
- Cooking spray
- 40 wonton wrappers
- 20 mini shrimp, cooked and peeled
- 2 Tablespoons breadcrumbs
Melt the butter in a small saucepan over medium-low heat and add the garlic. Stir constantly for about 3 minutes. Whisk in the flour until smooth, then whisk in the milk until smooth. Remove from the heat and stir in the Brie and honey. Season with salt and pepper, to taste.
Coat a muffin tin with cooking spray. Press wonton wraps in the bottom of each muffin tin. Add 1 teaspoon of cheese sauce, another wonton wrapper, 1 or 2 shrimp, cheese sauce, another wonton wrapper and so on until it is as full and tall as you want. Be sure to press wonton wraps around the edges so they will take shape and cook together.
Top with the breadcrumbs and bake for 15-18 minutes. Let cool slightly before removing from the muffin tin.
