- 1 Cup all-purpose flour
- 2 Teaspoons baking powder
- 5 Tablespoons sugar, divided
- 3/4 Cups 2 percent milk
- 1 egg, slightly beaten
- 1/2 Teaspoon vanilla extract
- 3 Tablespoons Country Crock Simply Delicious, divided
- 3 Cups mixed fresh berries or thawed frozen berries, divided
Combine flour, baking powder and 1 tablespoon sugar in medium bowl. Whisk in milk, egg, vanilla and 1 tablespoon melted Country Crock® Simply Delicious. Gently stir in 1 cup berries.
Melt 1 tablespoon Country Crock® Simply Delicious in large nonstick skillet over medium heat. Drop batter into skillet by 1/4 cupfuls. Cook pancakes over medium heat, turning once, until done, about 3 minutes. Set aside and keep warm.
Melt remaining 1 tablespoon Country Crock® Simply Delicious in same skillet. Stir in remaining 4 tablespoons sugar and berries. Cook, stirring occasionally, until heated through and liquid becomes syrupy, about 3 minutes. Serve berries over warm pancakes.*
