Ingredients

Butternut Squash Slaw

  • 2 Cups shredded squash
  • ½ Cup julienned onions
  • 1 Tbsp. fried shallots
  • ½ Cup green onion tops
  • 1 Tbsp. cilantro
  • 1 Tbsp. fried garlic
  • ¼ Cup roasted peanuts
  • 1 Cup shredded carrots

Nouc cham

  • ½ Cup Red Boat fish sauce
  • ½ Cup coconut water (harmless harvest if available)
  • ½ Cup of white vinegar
  • ½ Cup of lime juice
  • 2 jalapeño peppers
  • 4 cloves of garlic minced
  • ½ Cup palm sugar

Directions

Butternut Squash Slaw

Mix all the fresh vegetables together and toss with the nouc cham, top with peanuts, garlic and shallots. Serve this dish family style.

Nouc cham

Dissolve sugar into fish sauce and chill. Mix the rest of the ingredients together and refrigerate.

Look for vegetables that are firm and bright in color – avoid those that are wilted or have wrinkled skins, which are signs of age.
