Peach cobbler is a pretty simple dessert to whip up for a crowd. But add a few "extras" like bourbon and mascarpone cheese and you'll really impress your crowd.

Bourbon Peach Cobbler
Ingredients
  • 5 peaches, peeled and sliced into thin pieces
  • 1/2 cup bourbon
  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon corn starch
  • 1/2 tablespoon nutmeg
  • 1/2 tablespoon cinnamon
  • 1 cup flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoon butter, cut into small pieces
  • 1/4 cup boiling water
  • mascarpone cheese
  • cinnamon, for sprinkling
Directions
  1. Preheat oven to 425 degrees F.
  2. Peel and slice peaches and soak them in bourbon for an 1-2 hours.
  3. Strain off bourbon (save it for your drink later!).
  4. Mix peaches with brown and white sugar, corn starch, nutmeg, and cinnamon in a large bowl.
  5. Transfer peach mixture to glass baking pan and bake for 10 minutes and remove from oven.
  6. Mix together flour, white and brown sugar, baking powder, and salt. Add butter and mix together until you get a mealy texture. Stir in boiling water until just combined. Scoop tablespoon sized dollops of mascarpone cheese into the peach mixture. Sprinkle topping on peach mixture and top with extra cinnamon.
  7. Bake for 30 minutes, until top is golden brown.
