The batter for this traditional French dessert is somewhere between that of a cake and a custard. It takes no more than 10 minutes to prepare the batter in the blender.

Ingredients
  • 1 tablespoon unsalted butter
  • 6 large eggs
  • 1 1/4 cup half-and-half
  • 1/2 cup granulated sugar
  • 2 tablespoon brandy
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 2/3 cup all-purpose flour
  • 1 (12-ounce) package frozen cherries, thawed
  • confectioners' sugar, for serving
Directions
  1. Pre-heat the outdoor grill.
  2. Generously coat a 10-inch skillet with 1 tablespoon unsalted butter.
  3. Process 6 eggs, 1 1/4 cup half-and-half, 1/2 cup sugar, 2 tablespoons brandy, 1 tablespoon vanilla extract and 1/4 teaspoon salt until well blended.
  4. Add 2/3 cup flour and process until smooth and well blended.
  5. Scatter 1 (12oz) bag frozen cherries in the prepared skillet and pour the batter over them.
  6. Place on grill over indirect heat and "bake" until puffed and golden, about 40-45 minutes. Lightly dust with confectioners’ sugar before serving.
