Sammy never liked taking chicken to school for lunch, but when I put this macaroni and cheese in her thermos (albeit, a gluten-free version), she came home and told me I had given her two of her favorite foods in one! I don't know who was happier — Sammy or her mother, who had managed to sneak in some more brain-boosting protein into her daughter's mac and cheese lunch! Maybe that's why she aced the math test!
- One 6-ounce box macaroni and cheese, preferably whole-grain
- 1/4 cup low-fat milk
- 2 tablespoons barbecue sauce
- 6 tablespoons baby food carrot or sweet potato purée
- 1/2 cup cooked chicken, diced
Bring a large pot of water to boil over high heat. Cook the macaroni according to package directions and drain. Combine the milk, barbecue sauce, and purée in the same pot and return to a simmer, stirring until well combined. Add in the chicken and macaroni, warm through, and serve.
