Bacon Wrapped Avocado Fries

Ingredients
- 1 large avocado
- egg
- 1 tablespoon water
- 1 cup panko or italian-style breadcrumbs
- 1/2 cup flour
- 1/4 teaspoon cayenne pepper
- salt and pepper, to taste
- 4 slices bacon, cut in half
- canola oil, enough for 1-inch in your frying pan
Directions
- Peel, pit and slice avocado into 8 equal wedges. Place wedges on a plate, cover with plastic wrap and freeze for 20 minutes. In a shallow dish, whisk together the egg and water. Place breadcrumbs and flour into two separate dishes or plates. Season the flour with cayenne, salt and black pepper.
- Once the avocados have chilled, take each wedge and dredge in flour. Shake off excess and dip into egg wash. Roll wedges in breadcrumbs. Take a 1/2 slice of bacon and wrap it around each wedge of avocado. Secure with toothpicks. Place back onto plate and freeze for another 10 minutes. Fill a heavy bottom pan with 1 inch of oil. Heat until the oil reaches 350 degrees F. Fry avocado fries for 3-4 minutes, turning as they become golden. Remove from oven and drain on paper towel. Season with salt and discard toothpicks.
