Back to Avocado 101!
- 4 ripe avocados – diced
- 2 Tablespoons lemon juice
- 4 Ounces plain Greek yogurt
- 6 Ounces English cucumber - diced
- 2 Tablespoons fresh mint - chopped
- 2 Ounces olive oil
- 1 Teaspoon sea salt
- 1 pinch cayenne pepper
Place diced avocado into bowl with lemon juice, chopped mint, cucumber and yogurt. Mix well.
Gradually drizzle in olive oil while mixing. Season with sea salt and cayenne pepper.
