Lighten up traditional deviled eggs by using avocado and Greek yogurt instead of mayonnaise. No one will be able to tell that these green eggs and ham are guilt-free!

We even have a trick that will help you peel a hard-boiled egg perfectly every time, so making this recipe will be a breeze.

Ingredients

  • 8 eggs, such as Safest Choice pasteurized eggs, hard-boiled
  • 1 avocado
  • 2 Tablespoons Greek yogurt
  • 1 Tablespoon yellow mustard
  • 1 Teaspoon lemon juice
  • Salt, to taste
  • Pepper, to taste
  • 3 Ounces prosciutto, sliced into one-inch strips

Directions

Cut the Safest Choice™ hard-boiled eggs in half and add the yolks into a bowl.

Mix together egg yolks, avocado pulp, Greek yogurt, mustard, lemon juice, and salt and pepper until well combined.

Spoon egg yolk mixture into halved egg whites and garnish with rolled up slices of prosciutto.
