Ingredients
  • 8 eggs, such as safest choice pasteurized eggs, hard-boiled
  • 1 avocado
  • 2 tablespoon greek yogurt
  • 1 tablespoon yellow mustard
  • 1 teaspoon lemon juice
  • salt, to taste
  • pepper, to taste
  • 3 ounce prosciutto, sliced into one-inch strips
Directions
  1. Cut the Safest Choiceâ„¢ hard-boiled eggs in half and add the yolks into a bowl.
  2. Mix together egg yolks, avocado pulp, Greek yogurt, mustard, lemon juice, and salt and pepper until well combined.
  3. Spoon egg yolk mixture into halved egg whites and garnish with rolled up slices of prosciutto.
