Avocado Icing
Ingredients
  • 8 ounce avocado meat, about 2 avocadoes
  • 2 teaspoon freshly squeezed lemon juice
  • 1 pound powdered sugar, sifted
  • 1/2 teaspoon lemon extract
Directions
  1. Place the avocado meat into the bowl of a stand mixer fitted with the whisk attachment. Add the lemon juice and beat until lightened in color, about 2-3 minutes. Gradually add the powdered sugar and beat until smooth. Add the lemon extract and mix to combine.
